Potatoes with ‘quark’ – 3 recipes

You’ve probably noticed after 492402 photos on Instagram that i L O V E the German classic dish potatoes with quark and there are many reasons for it. This is a true childhood memory. When I was living with my parents we simply cooked a large pot of potatoes and served it like this directly on the table. There we sat happily and peeled hot potatoes to eat it with lots of quark. I love this combination of hot potatoes and cold quark – it’s such a simple, quick recipe. You don’t need many ingredients and it’s possible to vary the dish. So share the love for ‘Kartoffeln mit Quark” – here are basics and 3 different recipes for it.

About potatoes

You should always use waxy or mostly waxy potatoes, don’t use floury ones for this dish. To peel or not to peel potatoes? I have to admit that I am sometimes too lazy for peeling potatoes BUT here’s something to know. There is solanine in potato peels that can cause side effects when consumed in large amounts. Since you probably now google WHAT side effects (spoiler: headache, sickness, …), let me spare you some work and give you the Wikipedia definition. “Solanine is a glycoalkaloid poison found in species of the nightshade family, such as the potato, the tomato, and the eggplant.” The level of Solanine is growing when you store potatoes in light, so always make sure to store them in dark, chilly places. You’d need to eat LOTS of potatoes to even feel side effect, but then … i could eat tons of potatoes because of this dish, so let’s just peel the potato to be on the safe side.

About quark

A few months ago I always recreated this dish with vegan soy yoghurt but by now there is actually a vegan version of quark available (at least in Germany). Always make sure to buy them unsweetened. Afterwards, you can add nearly everything – sometimes I finely dice an onion or pickles, chop herbs and always add salt and pepper.

About add-ons

Now we have potatoes and we have quark. What’s missing? Whatever you like! In my childhood, we always ate butter and liverwurst with it which is both available in vegan, yay. A few years later I ate it with linseed oil for the first time. This is a classic combination in some areas in Germany and now i understand why! You should definitely try it. The classic

Classic potatoes with curd

Ingredients
  1. approx. 500 g - 600 g (18 - 21 oz) potatoes
  2. 400 g (14 oz) vegan quark
  3. 1 red onion
  4. 20 g (0.7 oz) mixed herbs of choice (parsley, dill, chives, ...)
  5. 4 radishes
  6. 100 g (7 oz) vegan liverwurst
  7. 2 tbsp linseed oil and/or 2 tbsp vegan butter
  8. cress
  9. salt
  10. pepper
Instructions
  1. Add potatoes to a pot and fill up with water until all potatoes are covered. Salt water and bring to boil. Then reduce heat and simmer for approx. 20 minutes until potatoes are soft and cooked.
  2. In the meantime finely dice red onion and chop herbs. Stir in vegan quark and season with salt and pepper.
  3. Slightly cool potatoes, then peel and serve with quark. If you want, also serve with cress, vegan liverwurst, linseed oil and radishes.

Sweet potato with quark

Ingredients
  1. approx. 500 g - 600 g (18 - 21 oz) sweet potato
  2. 400 g (14 oz) vegan quark
  3. 1 red onion
  4. 20 g (0.7 oz) mixed herbs of choice (parsley, dill, chives, ...)
  5. 2 tbsp linseed oil and/or 2 tbsp vegan butter
  6. cress
  7. salt
  8. pepper
Instructions
  1. If you want, peel sweet potato and cut in equal-sized slices. Bring salted water to boil in a pot and add sweet potato slices. Cook for approx. 10 - 12 minutes until the sweet potato is soft.
  2. In the meantime finely dice red onion and chop herbs. Stir in vegan quark and season with salt and pepper.
  3. Serve sweet potato with vegan quark and cress and linseed oil if you want.

Ingredients
  1. approx. 500 g - 600 g (18 - 21 oz) potatoes
  2. 400 g (14 oz) vegan quark
  3. 50 g (2 oz) mixed herbs of choice (parsley, dill, chives, ...)
  4. 2 tbsp linseed oil and/or 2 tbsp vegan butter
  5. cress
  6. salt
  7. pepper
Instructions
  1. Add potatoes to a pot and fill up with water until all potatoes are covered. Salt water and bring to boil. Then reduce heat and simmer for approx. 20 minutes until potatoes are soft and cooked.
  2. In the meantime add herbs and olive oil and blend until kind-of-smooth. Then mix in half of vegan quark and blend again until smooth. Stir in remaining quark and season with salt and pepper.
  3. Slightly cool potatoes, then peel and serve with quark. If you want, also serve with cress and linseed oil.
