Vegan Summer Bowl with peaches and a berry dressing

Vitamins, come to us! If you follow us on Instagram, you may have noticed that I love bowls, no matter if they are filled with quinoa, couscous, rice, potatoes or salad. So there are three main reasons for bowls: in the first place you can put a lot of yummy things in it and don’t have to choose just a few of them, secondly you can use your scraps and thirdly you can top all the good things with your favorite dressing and that’s it. Today we show you our berry summer version of it, yay!

Ingredients
  1. 1 1/3 cups green beans
  2. 2 peaches
  3. 3/4 cup pine nuts
  4. 1/4 cucumber
  5. 1 avocado
  6. 10 raspberries
  7. 5 cups rocket salad
DRESSING
  1. 1/2 cup raspberries
  2. 2 tbsp. agave syrup
  3. 2 tbsp. balsamic vinegar
  4. 1 tbsp. olive oil
  5. some water
Instructions
  1. Fill a in a high frying pan with water (ca. 3-4cm), add a pinch of salt and bring to a boil.
  2. Wash green beans and boil for 3-4 minutes.
  3. Wash arugula and cut of the ends.
  4. In a small, dry frying pan, toast pine nuts until they are golden and give off a light fragrance.
  5. Halve the avocado and the peaches, stone and peel them and cut flesh into narrow thin strips.
  6. Mix all the ingredients for the dressing in a high container and season with more agave syrup or salt, depending on the sweetness of your berries.
  7. Now fill your bowl with all the ingredients and drizzle the dressing over the bowl.
